How We Calculate This

Round pan area = π × (diameter/2)². Square pan area = side². Rectangular area = width × length. Multiplier = target area / original area. Adjust baking time inversely with batter depth.

How do I adjust baking time for different pan sizes?

Smaller/deeper pans need longer baking time at lower temperatures. Larger/shallower pans need shorter time. Generally, adjust by 10-15% and check for doneness early.

Can I use two smaller pans instead of one large one?

Yes! Divide the batter between pans. Two 8" rounds have almost the same area as one 9×13" rectangular. Reduce baking time by about 25% for thinner layers.

What if my pan is a different depth?

Standard pans are 2" deep. If using deeper pans, the batter will be thicker and need longer baking at a slightly lower temperature. Shallower pans bake faster.

How do I know if a pan substitution will work?

Keep total pan area within 10% for best results. Fill pans 1/2 to 2/3 full. If a recipe calls for 9" and you use 8", expect a taller, moister cake that needs more time.
